The siphon — also called a vacuum pot — is coffee brewing as performance. Invented in the 1830s and beloved in Japanese specialty coffee culture, it uses vapor pressure and vacuum suction to produce a cup with the clarity of a pour over and the body of an immersion brew. It is a conversation starter and a genuinely exceptional brewing method.

What You Need

  • Siphon brewer (Hario or Yama)
  • Cloth or glass filter
  • Butane burner or halogen heater
  • Bamboo paddle
  • Burr grinder
  • Scale
  • Timer

Step by Step

01

Soak the Filter

Soak a cloth filter in hot water for 5 minutes before brewing. Attach it to the hook at the bottom of the upper chamber.

02

Fill the Lower Chamber

Fill the lower globe with hot water to your target amount. Attach the upper chamber loosely — do not seal it yet.

03

Apply Heat

Place over your heat source. As water heats, it rises into the upper chamber through the tube. Wait until almost all the water has risen before adding coffee.

04

Add Coffee and Stir

Add ground coffee to the upper chamber and immediately stir to ensure even saturation. Start your timer — extraction begins now.

05

Brew 60–90 Seconds

Maintain gentle heat and stir once or twice during brewing. The upper chamber should stay around 175°F. Adjust heat as needed.

06

Remove Heat — Watch the Draw-Down

Remove heat at 60–90 seconds. The drop in temperature creates a vacuum pulling brewed coffee back down through the filter. Total draw-down: 30–60 seconds.

07

Remove Upper Chamber and Serve

Once draw-down is complete, twist and remove the upper chamber. Pour directly from the lower globe immediately — siphon coffee does not hold well.

Pro Tips

  • A butane burner gives more control than a standard stovetop.
  • Cloth filters produce a cleaner, sweeter cup than glass bead filters.
  • The siphon amplifies everything — defects and qualities alike. Use your best coffee here.
  • Brew time of 60–90 seconds is the sweet spot. Longer = bitter; shorter = sour.

The right coffee makes every method taste better.
